A change of pace from tuna salad or regular tuna patties, these fish sticks are crispy on the outside and moist on the inside. And when they are paired with the spicy avocado sauce, yum!

 

Ingredients for tuna fish sticks: (makes 8 sticks)

  • 2 Canned tuna, drained
  • 2 Eggs
  • 3 Tablespoon Parmesan cheese
  • 3 Tablespoon chopped green onions
  • 1/4 teaspoon pepper
  • 1/4 teaspoon onion salt
  • 1/4 Cup crushed saltine crackers
  • 1/2 Cup Panko

Ingredients for the sauce:

  • 1/3 Cup avocado
  • 1/3 Cup Greek yogurt
  • 2 Tablespoon lemon juice
  • 1-2 Table spoon of Sriracha hot sauce
  • 1 Clove of garlic

In a large bowl, use a fork to fluff up the tuna. Add the eggs, Parmesan cheese, green onion, onion salt, pepper, saltine crackers and mix well. Shape the mixture to form fish sticks then roll them in Panko.

Spray some oil in the air fryer basket and gently put the tuna sticks inside the fryer basket. Air fry at 380F (190C) for 9-10 minutes, flip once, until Panko is golden brown.

In the meantime, use food processor to mix together the avocado, lemon juice, garlic cloves, Greek yogurt and Sriracha and set aside.

Serve the tuna sticks with the sauce.
