Green onion pancakes are a popular Chinese breakfast dish in many parts of the word. Here, we make them into crispy chip in this fusion breakfast nachos.

Ingredients:

  • 3 Frozen green onion pancake
  • 3 Eggs
  • 1/4 Cup chopped green onion
  • 1/4 Cup diced ham (optional)
  • pinch of salt and pepper
  • 1 Roma tomato seeded and diced
  • 1/3 Cup store bought nacho cheese

Thaw the frozen green onion pancakes on the counter for a few minutes then cut them into wedges. Air fry, without stacking, at 380F (190C) for 8-9 minutes, flip once, until golden brown.

In the meantime, prepare scramble egg (eggs, diced tomato, and half of chopped green onion, and salt and pepper) on a skillet. When plating, top the scramble egg with diced tomatoes, nacho cheese, and the remaining of the green onions. Enjoy the green onion pancake chips with the nacho style scramble egg while still hot.
