Description
Bacon, eggs, mushrooms and low carb? Not sure there is a better breakfast-on-the-go out there.
Ingredients
- 1 cup of mushrooms, finely chopped
- 1/2 cup of spinach, finely chopped
- 8 eggs, whisked
- 1/2 onion, finely chopped
- 12 slices of bacon (raw)
- 1/2 cup (120 ml) coconut milk (from a can)
- Salt and pepper, to taste
- 1 teaspoon (2 g) baking powder
Instructions
- Preheat oven to 350 F (175 C).
- Combine all the ingredients together in a large mixing bowl.
- Wrap a slice of bacon around the inside of each muffin cup.
- Pour the egg mixture into muffin cups (makes 12 muffins).
- Bake for 25-30 minutes until the middle of the muffins isn’t liquid anymore.
