    Description

    Bacon, eggs, mushrooms and low carb? Not sure there is a better breakfast-on-the-go out there.


    Ingredients

    • 1 cup of mushrooms, finely chopped
    • 1/2 cup of spinach, finely chopped
    • 8 eggs, whisked
    • 1/2 onion, finely chopped
    • 12 slices of bacon (raw)
    • 1/2 cup (120 ml) coconut milk (from a can)
    • Salt and pepper, to taste
    • 1 teaspoon (2 g) baking powder

    Instructions

    1. Preheat oven to 350 F (175 C).
    2. Combine all the ingredients together in a large mixing bowl.
    3. Wrap a slice of bacon around the inside of each muffin cup.
    4. Pour the egg mixture into muffin cups (makes 12 muffins).
    5. Bake for 25-30 minutes until the middle of the muffins isn’t liquid anymore.
