The rich buttery Hollandaise sauce makes this egg Florentine so tasty.

Ingredients:

  • 3 English muffin halves
  • 3 Eggs
  • 6 Tablespoon water
  • 1 Cup steamed spinach
  • 3 Egg yolk
  • 4 Ounce salted butter
  • 2-3 Tablespoon lemon juice
  • 1 teaspoon parsley flakes
  • A pinch of cayenne pepper

Place 3 muffin tin in the air fryer basket. Scoop 2 Tablespoon of water into each muffin. Then, carefully crack one egg into each tin and air fry at 380F (190C) for 6-7 minutes.

In the meantime, take a sauce pan and heat the butter to boil.

In an electric mixer, start mixing the egg yolk at high speed. Slowly adding the melted butter and gradually then increase the pouring speed. Add in the lemon juice and cayenne pepper and mix until the sauce doubles.

To plate, put spinach on top of biscuit followed by poached egg. Drizzle Hollandaise sauce over the egg and sprinkle some parsley flakes to serve.
